This blueberry pie is super simple to make but I’m sure it will impress whoever you decide to share it with. Or you can eat it all yourself. I’m not judging!
Alright, let’s get to it! Here’s what you need and how to do it.
I use this crust recipe: I doubled it to get enough dough for the actual piecrust + a lattice pattern on top. If you’d rather make a whole lid of dough to cover the pie you might want to multiply it by three.
- 3 pints of blueberries
- 1/2 cup of sugar
- 1/2 cup of flour
- 1/4 cup of lemonjuice
- 2 teaspoons vanilla extract
First, make the dough and let it cool in the fridge. Then, just toss the ingredients for the filling together. Roll out the dough for the pie crust, butter a 9″ pie dish and press the dough into the dish. Fill it with the blueberry mix and decorate the top however you’d like. Bake at 350 F for about 40 – 45 minutes. See, easy, right?
Enjoy with a scoop of vanilla ice-cream, whipped cream or my new favorite, vanilla flavored greek yogurt.
